La Ravigote (Paris: Bastille)

By in 01: Paris, Favorite Food Entries

Again we read about this restaurant from this book that it specialized in Ravigote sauce. From wiki: Ravigote is a classic French sauce that’s based on Velouté sauce cut with white wine vinegar, with dijon mustard, finely chopped, sautéed shallots/onions, capers and herbs. Our mouth watered just from reading about it. They served it with calf’s head here.

The restaurant is hidden in midst of a residential area. We got there before their opening time, but the cool owner let us in.

Sweet wine before meal, and very good bread (or I should say, there’s no bad bread in Paris).

3 courses for 18 Euro (we skipped desserts because we got too full).

My first: very good Terrine Vignerone. I panicked a bit at how big portion it is, because I knew I’ll finish it and stuff my stomach before the main course.

Here it is: Tête de Veau (Calf’s Head) Ravigote. Oh my goodness it’s incredibly delicious! The lightly acidic sauce taste rather complex, though it’s dominant by shallot’s flavor. The finely chopped herbs + wine vinegar combination reminded me slightly of those chopped pickled green condiment that goes with the Taiwanese beef noodle, but much richer and heavier.

Joan’s pick, just for variety of photos.

Hareng Pomme a l’huile (Herring with Potatoes) and Civet de Biche (Doe Stew). When the owner translate the menu for us he couldn’t remember the English word for deer and said “Bambi!” instead. It’s very hearty and well done but it paled in comparison to the Ravigote. Should have just get their signature dish.

The owner has a no smiling stern face but he’s very humorous. The funny signs and figurines all over the interior reflected his cool and funny personality.

No matter how many fine gourmet I’ve had during the trip, the one thing that lingers on my mind is the taste of this Ravigote sauce. I keep thinking about it for the rest of the trip. There’s just something so satisfying about it.

Hi Lisa, thank you for reading the blog! After I finished the Paris food-blogging I’m thinking of writing a summary, hope there’d be some helpful info to you. I want to go back to fill in the metro station of the restaurants as some are not easy to find.

Yes Seat, we NEED you haha! The Province food will be huge portion I imagined. We tried to just share one dessert but sometimes even that’s impossible (esp. if we have a bakery destination coming up).
