I think in paris too only madame go to these pastry salon~ (at least when we were there, there was only an elderly couple ^^;;). Even though Bastille is supposedly a youth/hipster area. The other Dalloyau shops+salon in Paris are at old money/madame area. From what I read, the reality is that most average Parisienne won't pay for something that they could have get much cheaper in local market/neighborhood bakery. And certainly young people will never hang out at madame area.
